Tropical Fruit Salad

Tropical fruit salad made aboard s/y Gyatso.

This recipe was included on a post card we sent to our niece, Betsy, in Michigan.

Lisa made it for Christmas while we were in the Caribbean. She used local rum and nutmeg we brought back from a trip to the Spice Islands in Indonesia.

 

SALAD

2 ripe bananas, cut into rounds
2 ripe mangoes, peeled, seeded and cubed
3 slices fresh pineapple, peeled and cubed
1 pink grapefruit, peeled, seeded and segmented
1 fresh orange, peeled, seeded and segmented
1 star fruit, cut into 1/4 inch slices
4 passion fruits, juiced
1 T brown sugar
2 T light rum
nutmeg, freshly grated
juice of 1 lemon
fresh mint leaves, for garnish

Combine fruits in mixing bowl. Sprinkle with sugar, rum, nutmeg and lemon juice. Mix well and refrigerate for one hour before
serving. Garnish with fresh mint leaves.
