David remembers his mom making a refreshing cucumber salad. We found this recipe starred in one of her cookbooks:
Rinse and pare
1 large cucumber
Score cucumber by pulling the tines of a fork lengthwise through the cucumber. Cut cucumber into very thin slices. Put in a shallow bowl.
Mix well
1/3 cup cider vinegar
1/3 cup water*
1/3 cup sugar*
1/2 tsp salt
few grains white pepper
Pour over the cucumber slices and toss lightly to coat evenly. Cover and put in the refrigerator for several hours to chill and allow flavors to blend.
Garnish cucumbers with
1 T finely chopped parsley
Makes 8-10 servings.
* The original recipe in The Scandinavian Cookbook called for 5 T each of water and sugar but she wrote “1/3” in the margin next to these two items.
