Spanish Rice

This goes well with Chicken Fajitas and refried beans.

1/2 cup onions, chopped
1 tablespoon extra virgin olive oil or vegetable oil
1 clove of garlic, chopped
1/2 cup green bell pepper, chopped
1 cup rice (medium-grain or Arborio rice preferred)
1 1/2 – 2 cups water or low-salt chicken broth
1 cup canned tomatoes, drained and chopped
1/2 teaspoon paprika or a dash of ground red pepper flakes, to taste
salt and pepper, to taste

Add oil and onions to a medium-sized sauce pan and sauté over medium heat for 3-5 minutes until softened. Add garlic and pepper and continue cooking for 1-2 minutes, stirring regularly. Add rice and sauté for one minute before pouring in the water or broth, tomatoes, paprika, salt and pepper. Bring to a boil, stir once, and then turn down heat to low, cover and simmer for 25 minutes (consult rice package for instructions about cooking times).
